One of the primary winemaking techniques used is called "cold soak". Instead of fermenting the grapes immediately after harvest, fruit is placed in stainless steel tanks and held for 5-6 days at a temperature of 44 degrees Fahrenheit. This period of cold soaking allows grape skins to maintain contact with the juice for deep color and flavor extraction, controlling the release of angular tannins.

From each vintage, Archipel releases one limited edition Bordeaux-style blend of Cabernet Sauvignon, Merlot, and Cabernet Franc grapes.
